The very best Salmon Croquettes you’ll ever make

Ingredients:
30 oz canned salmon, drained and bones removed
10 oz frozen mirepoix
2 tbsp Lemon and Herb Old Bay seasoning
2 tbsp garlic powder
1 cup bread crumbs (plus extra for coating)
3 tbsp mayonnaise
4 large eggs
1 cup All-purpose flour (for coating)
Canola oil (for frying)
Instructions:
1.) In a large bowl, flake the drained salmon and remove any remaining bones.
2.) Add the garlic powder and Lemon and Herb Old Bay seasoning to the salmon. Mix until well combined.
3.) Stir in the frozen mirepoix, 2 eggs, mayonnaise and bread crumbs.
4.) Combine all ingredients until the mixture is firm enough to form patties. If it's too loose, add more bread crumbs; if too firm, add more mayonnaise.
5.) Shape the mixture into patties and refrigerate for at least 1 hour to help them set.
6.) beat your two remaing eggs and begin to heat your oil up to 330º.
7.) Once ready to cook, remove the patties from the fridge. Coat each croquette first in all-purpose flour, then dip into beaten eggs and finally coat with additional bread crumbs.
8.) Fry the croquettes in batches of three, cooking for about 5 minutes on each side or until they are golden brown and crispy.
9.) Once cooked, place the croquettes on a paper towel-lined plate or rack to drain excess oil.
10.) Serve warm and enjoy!
